Cranberry-Walnut-Granola-TessaHuffAfter a weekend of indulgence, I am in need of a week of clean, healthy eating.  We just got back from a beautiful trip to California, celebrating the marriage of great friends.   It was a whirl-wind of a weekend, including 1) driving across the border 2) an early morning plane ride 3) a bus through Oakland 4) a fabulous BART ride 5) an even more fabulous ride on a school bus up the winding hills of Berkley and 6) partying it up with amazing friends before turning around and heading back the very next day.  Whew!  It was definitely worth all of the effort, but boy is my schedule and eating habits irregular- especially since I had to sample all 3 cupcake flavors at the wedding.  It’s “research,” I swear!  

Come Monday morning, and my body definitely needed a boost.  I kick-started the week with fresh pressed green juice (swiss chard, celery, cucumber, lemon, and apple) and headed to the market for fresh produce and dry goods.  This week is going to be a busy one, and I know I am going to need to some healthy fuel.

One of my go-to breakfasts for busy days is home-made granola.  I know it is not the lowest-calorie snack, but sometimes you need some sustenence when you know you will be on the run all day.  Surely I am not a dietitian nor health nut (my career is based on making cakes, for goodness sake!), but I do try to find options where at least I know the ingredients that are going into my body.  With that said, home-made granola is one of the easiest recipes to make, alter, and use up lots of dry goods and goodies.  Switch up the nuts, spices, and dried fruit- and you have an entirely different recipe!


Cranberry Walnut Granola Recipe


  • 3 cups old-fashioned oats
  • 1 1/2 cups chopped walnuts
  • 1 cup dried cranberries
  • 1 cup dried apple pieces
  • 1 cup chopped chocolate- covered espresso beans
  • 1/2 cup agave syrup
  • 1/2 cup coconut oil, melted
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • 1 teaspoon cinnamon


  1. Preheat oven to 300 degrees. Prepare a rimmed baking pan with parchment or a silpat and set aside
  2. Combine all of the ingredients in a large bowl, minus the cranberries and apple pieces.
  3. Mix to make sure everything is evenly distributed.
  4. Evenly spread out the mixture on the prepared baking pan.
  5. Bake until golden and dry- stirring every 10 minutes for about 40 minutes.
  6. Once cool, stir in the dried cranberries and apple pieces.
  7. Store in an air tight container at room temperature for about 2-3 weeks.

I love finding ways to use coconut oil, especially when the coconut taste does not contrast with the other ingredients.  This recipes even has enough tasty bits in it that I don’t find myself picking around for “goodies.”  The cinnamon adds a wonderful layer of flavor without having to add more sweetness.  I typically enjoy my granola with almond milk, but you can throw it on mixed fruit, stir it it your yogurt, or top it off with the delicious strawberry- rhubarb compote from this recipe.   Love coconut flakes?  Gotta have wheat germ or chia in the morning?  Throw those is too!  Feel free to make this mix your own.
